NELL’S CHAI came about after years of enjoying Indian food and, after beginning to eat a vegan diet, loving the variety of Indian spices and dishes that are plant-based. Chai is a delicious and nutritious hot drink, either alone or with an Assam tea or turmeric-ginger tea added.

My Chai Spice recipe includes turmeric but I decided to offer two additional varieties that add nutmeg or cacao, which are especially nice if you are drinking the chai without adding tea. For our recipe, we use pea protein "milk" or almond milk. You can also sprinkle it on salads, fruits, vegetable dishes and even desserts like fudge and ice cream.


How To Prepare (Serves two):

  • Put 2 cups of water, 2 cups of milk (or milk alternative) and 2 teaspoons of Nell’s Chai Spice in a saucepan

  • Bring to a low boil, then reduce to low heat and simmer for 5 minutes

  • Pour it over a strainer into 2 cups and turn the heat off of the pot

  • Drink and go back for more by just adding water and milk and warming again.

  • One teaspoon makes one serving, but it can be re-used with additional water or milk added once or twice more
